Name: Lite & Tasty Calamari Stir-Fry - healthy and fast!

Total Time: 15-20 Mins

Serves: 2

Lite and Tasty Calamari stir fry - Quick easy recipe

Ingredients:

2 Large squid tubes, cut in rings
1 cup Jasmin Rice
1 250ml Can Coconut Milk
1 Small Brokoli Head
Handfull of Snowpeas
1 Small chilli (Seeded, chopped) - optional
1 large Carrot (Cut in in matchsticks)
2 Tbsp Fish Sauce
1 Clove Garlic (Crushed)
1/2 tsp Ginger
50ml Lemon Juice
1 tsp salt
Fresh cracked pepper

Method:

Put your rice on first. We will be making coconut rice (my style). Add 1 cup of water and coconut milk to saucepan, bring to boil. Add rice, cover and simmer for 15-17 mins.

In hot wok add calamari, fry 1 min. Add garlic, ginger and chilli, stir 30 sec. Add the rest of vegetables and fish sauce, fry 2 mins. Stir in lemon juice salt pepper. Serve on bed of rice. Enjoy it.


Name: Fire Fettucini (Quick vegetarian dinner recipe)

Total Time: 10-12 Mins

Serves: 2

Fire Fettucini - Quick easy recipe

Ingredients:

Fettucini 300g
1 x Zuccini (Medium, sliced small)
1/2 Brown Onion (Diced fine)
2 Slices roasted Capsicum
3 Medium Size Tomatos (Skinned, Diced roughly)
1 Small chilli (Seeded, chopped)
10 Medium Size mushrooms (Sliced)
2 Tbsp Tomato Puree
1 Clove Garlic (Crushed)
1/2 Cup Grated Chedder Cheese
1 Tsp salt
Fresh cracked pepper
1 Tsp Mixed Herbs (Or just oregano and basil)

Method:

Put Fettucini on to boil. Add to pan, garlic, chilli and onion. Sweat off onion. Add zuccini, fry 1 min. Add tomato, capsicum, tomato puree, mushrooms, herbs and salt. Stir fry for 1-2 mins.

Lay Fettucini on plate. Spoon ingredients onto Fettucini bed. Sprincle with cracked pepper and place some grated cheese in center. Enjoy it.
